Description

This Crockpot Shepherd Pie combines savory ground beef, hearty mixed vegetables, and creamy mashed potatoes, creating a comforting meal that’s easy to prepare and perfect for any night.


Ingredients

  • 2 lbs ground beef or ground lamb
  • ½ large onion chopped
  • 4 garlic cloves minced
  • 12 oz bag frozen mixed vegetables
  • 1 ½ cups beef broth
  • 4 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 0.87 oz brown gravy mix packet
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 4 large idaho potatoes
  • 4 tablespoons butter
  • Chopped parsley to garnish

Instructions

  1. Heat a large skillet over medium heat.
  2. Add the ground beef and cook until no longer pink, breaking it up as it cooks.
  3. Stir in the onion and garlic; cook for an additional 3 to 5 minutes until softened and drain any excess grease.
  4. Transfer the beef mixture to the slow cooker.
  5. Spread the frozen mixed vegetables evenly over the beef.
  6. In a bowl, whisk together the beef broth, tomato paste, Worcestershire sauce, brown gravy mix, Italian seasoning, salt, and pepper.
  7. Pour the prepared gravy over the meat and vegetables in the slow cooker.
  8. Cover and cook on LOW for 6 to 8 hours.
  9. During the last 2 hours of cooking, peel and chop the potatoes into large chunks.
  10. Boil the potatoes in salted water for 15 to 20 minutes until fork tender; drain well.
  11. Mash the potatoes with the butter until smooth.
  12. Stir the beef mixture gently and spread it into an even layer.
  13. Spoon the mashed potatoes over the beef filling and spread to the edges.
  14. Replace the lid and cook for the remaining 1½ hours.
  15. Garnish with chopped parsley and a pinch of salt and pepper before serving.

Notes

Feel free to substitute ground lamb with ground turkey or chicken for a lighter option.
You can use fresh vegetables instead of frozen if desired.
Adjust the seasoning according to personal taste.
