Description

These Crumb Apple Muffins are a delightful treat, bursting with apple flavor and topped with a sweet crumb mixture. They are simple to prepare and perfect for breakfast or as an afternoon snack, making them a favorite for family gatherings or quick meals.


Ingredients

  • 2 ½ cups diced apples (about 3 small/medium apples)
  • 2 teaspoons granulated sugar
  • ½ teaspoon cinnamon
  • ½ cups (62g) all-purpose flour
  • ½ cup (100g) packed brown sugar
  • ¼ teaspoon salt
  • 3 tablespoons (42g) unsalted butter, melted
  • 2 large eggs
  • 1 cup (200g) granulated sugar
  • ½ cup (118ml) vegetable oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon white vinegar
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • ¼ teaspoon salt
  • 1 cup (245g) sour cream
  • 2 cups (248g) all-purpose flour

Instructions

  1. Preheat the oven to 350°F and line muffin pans with paper baking cups.
  2. For the filling, place diced apples in a bowl, add about 1/2 inch of water, microwave for 2 minutes until slightly translucent but not fully cooked. Drain, then mix with sugar and cinnamon. Set aside.
  3. In a separate bowl, mix all topping ingredients until crumbly. Set aside.
  4. In a mixing bowl, using a hand mixer or spoon, beat eggs with sugar and oil until creamy. Stir in vanilla, vinegar, baking soda, cinnamon, and salt. Add sour cream, followed by the flour (batter may be lumpy). Fold in the apple mixture.
  5. Pour batter into muffin cups, filling each about 2/3 full. Sprinkle the crumb topping on each muffin.
  6. Bake for 15-19 minutes until a toothpick inserted comes out clean. Cool for 5 minutes in the pan before transferring to a rack.
  7. Store muffins in an airtight container for up to 3 days or freeze for up to one month.

Notes

For extra flavor, try adding walnuts or pecans to the batter.
Ensure the apples are diced small for even distribution and cooking.
