- 2 tablespoons olive oil
- 1 medium red onion, chopped small
- 4 cloves garlic, minced
- 2 jalapeño peppers, seeded and chopped
- 2 (15-ounce) cans black beans, drained and rinsed
- 1/2 teaspoon ground cumin
- 1 teaspoon salt or to taste
- 3 tablespoons fresh lime juice
- 1/4 cup chopped cilantro, plus more for serving
- vegan cheese, optional
- pickled red onions, optional
Instructions
- Heat olive oil in a small pan over medium heat.
- Add chopped red onion, minced garlic, and chopped jalapeño peppers to the pan and sauté for 5-8 minutes, stirring frequently; then remove from heat.
- In a food processor, combine the drained and rinsed black beans, sautéed mixture, ground cumin, salt, lime juice, and cilantro.
- Process the mixture until fairly smooth, leaving some texture if desired.
- Transfer to a serving dish, garnishing with additional cilantro, vegan cheese, and pickled red onions as preferred. Serve with tortilla chips.
Notes
Feel free to adjust the spiciness by reducing the jalapeños or adding more to taste.
This dip can be made ahead of time and stored in the fridge for up to three days.
Serve it alongside fresh vegetables for a healthy snack option.
