Description

This Easy Blackberry Pie is a delightful dessert bursting with fresh blackberry flavor. With a simple prep and an irresistible flaky crust, it’s perfect for gatherings and comfort food cravings.


Ingredients

  • 2 1/2 cups flour
  • 1/2 tbsp sugar
  • 1/2 tsp salt
  • 1 cup butter, cold & diced
  • 7 tbsp cold water
  • 1 egg + 1 tbsp water for egg wash
  • sugar for sprinkling, optional
  • 2 tbsp water
  • 2 tsp lemon juice
  • 1 tsp vanilla
  • 6 cups blackberries
  • 3/4 cup sugar
  • 5 tbsp cornstarch

Instructions

  1. In a food processor, combine flour, sugar, and salt to make the crust.
  2. Add cold, diced butter and pulse until coarse crumbs form.
  3. Mix in cold water until moist clumps appear.
  4. Transfer dough to parchment paper, divide into two balls, flatten into discs, and refrigerate for 1 hour.
  5. Preheat the oven to 400 degrees once the crust is ready.
  6. In a saucepan over medium heat, combine water, lemon juice, vanilla, and blackberries to create the filling.
  7. Stir in sugar and cornstarch gently and cook until thickened.
  8. Flour the counter and roll out the bottom crust to a circle about 12 inches in diameter, then place it into a 9-inch pie plate.
  9. Spread the blackberry mixture evenly over the crust, avoiding the edges.
  10. Roll out the top crust and place it over the filling; trim and seal the edges.
  11. Whisk egg and water in a bowl, brush over the pie, and sprinkle with sugar if desired.
  12. Cut a few slits in the top to allow steam to escape.
  13. Bake for 15 minutes, reduce heat to 350 degrees, and continue baking for 45-50 minutes until the filling bubbles and the crust is golden brown.
  14. Check the pie after 30 minutes, and cover with foil if the crust browns too quickly.
  15. Allow pie to cool at room temperature before slicing.

Notes

For a sweeter pie, increase the sugar in the filling to taste.
Letting the pie cool helps the filling to set up properly before serving.
Feel free to substitute other berries for blackberries if desired.
