Description

Easy Creamy Corn Pasta is a delightful dish packed with flavor and comfort. This quick dinner combines penne pasta, sweet corn, and a creamy sauce, making it perfect for weeknight meals.


Ingredients

  • ½ pound (8 ounces) penne pasta
  • 3 tablespoons butter
  • ½ tablespoon flour
  • 2 cloves garlic, minced
  • 2 cups corn, fresh or frozen
  • â…” cup heavy cream
  • 1 tablespoon lemon juice
  • ½ cup parmesan cheese, freshly grated
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • ¼ cup fresh basil

Instructions

  1. Bring a large pot of salted water to a boil over medium-high heat. Add the pasta and cook until al dente, for about 8–10 minutes or as per package instructions. Reserve ½ cup pasta water, then drain and set aside.
  2. In a large skillet, melt the butter over medium heat until sizzling, about 1 minute. Whisk in the flour and cook for 1 minute to eliminate any raw taste.
  3. Add the minced garlic and corn, cooking for about 2 minutes until fragrant and the corn starts to soften.
  4. Pour in the heavy cream, lemon juice, and ¼ cup of reserved pasta water. Stir constantly over medium heat for about 1 minute until smooth and slightly thickened. Add Parmesan cheese and stir until melted; add more pasta water if a looser sauce is desired.
  5. Season with salt and pepper to taste. Add the drained pasta and fresh basil to the skillet, tossing until well coated.
  6. Garnish with extra Parmesan and fresh basil if desired. Serve immediately while it's warm and creamy.

Notes

For a vegetarian version, ensure the cheese used is rennet-free.
You can substitute half and half for heavy cream to make it lighter.
Feel free to add other vegetables like spinach or peas for variety.
