- 3 tablespoons butter, divided
- 2 large onions, thinly sliced
- 2 pounds ground beef
- 2 large eggs
- 1/2 cup breadcrumbs
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon flour
- 1 cup beef broth
- 1/2 cup Swiss cheese, shredded
- 4–5 slices provolone cheese
Instructions
- Preheat the oven to 350°F (175°C).
- Melt 2 tablespoons of butter in a large skillet over medium heat. Add the sliced onions and cook for 20-25 minutes until golden and caramelized, reserving half for the sauce.
- In a large bowl, combine ground beef, eggs, breadcrumbs, Worcestershire sauce, thyme, salt, pepper, and the remaining half of the onions. Mix gently until combined.
- Shape the mixture into a loaf and place in a baking dish or loaf pan. Bake for 45 minutes.
- While the meatloaf bakes, return reserved onions to the skillet, add 1 tablespoon of butter and melt. Stir in the flour, cooking for 1 minute while whisking. Gradually whisk in beef broth and simmer until the sauce thickens (5-7 minutes).
- Remove meatloaf from the oven, top with Swiss cheese followed by provolone slices. Broil for 3-5 minutes until cheese is melted and golden.
- Let rest for 5-10 minutes before slicing. Serve with onion sauce spooned over the top.
Notes
Feel free to add your favorite spices to the meat mixture for extra flavor.
