Description

This garlic scape pesto brings a delightful flavor with simple ingredients like fresh basil, parmesan, and toasted nuts. Perfect for pasta dishes or spreads, it’s a quick and healthy option for any meal.


Ingredients

  • 1 cup garlic scapes, chopped
  • ½ cup fresh basil
  • â…“ cup parmesan cheese, grated
  • â…“ cup walnuts or pine nuts, toasted
  • ½ cup olive oil
  • 1 tablespoon lemon juice
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Rinse the garlic scapes under cold water and pat them dry. Trim off tough ends and chop them into 1-2 inch pieces.
  2. Toast the walnuts or pine nuts in a dry skillet over medium heat for 3-4 minutes, stirring until lightly golden and fragrant.
  3. Remove the nuts from the heat and let them cool slightly.
  4. In a food processor, blend together the chopped garlic scapes, fresh basil, toasted nuts, and parmesan cheese until finely chopped but not smooth.
  5. With the processor running, gradually add olive oil until the pesto reaches your desired consistency.
  6. Add lemon juice, salt, and black pepper, blending for 10-15 seconds to mix everything. Adjust seasoning if necessary.
  7. If too thick, stir in 1-2 tablespoons of olive oil or water and blend until it's smooth and spreadable.
  8. Serve immediately or store in an airtight container with a light drizzle of olive oil to maintain freshness.

Notes

For optimal freshness, consume within a week.
Pesto can also be frozen for longer storage; just leave out the cheese until ready to use.
