- 1 cup garlic scapes, chopped
- ½ cup fresh basil

- â…“ cup walnuts or pine nuts, toasted
- ½ cup olive oil
- 1 tablespoon lemon juice

- ¼ teaspoon black pepper
Instructions
- Rinse the garlic scapes under cold water and pat them dry. Trim off tough ends and chop them into 1-2 inch pieces.
- Toast the walnuts or pine nuts in a dry skillet over medium heat for 3-4 minutes, stirring until lightly golden and fragrant.
- Remove the nuts from the heat and let them cool slightly.
- In a food processor, blend together the chopped garlic scapes, fresh basil, toasted nuts, and parmesan cheese until finely chopped but not smooth.
- With the processor running, gradually add olive oil until the pesto reaches your desired consistency.
- Add lemon juice, salt, and black pepper, blending for 10-15 seconds to mix everything. Adjust seasoning if necessary.
- If too thick, stir in 1-2 tablespoons of olive oil or water and blend until it's smooth and spreadable.
- Serve immediately or store in an airtight container with a light drizzle of olive oil to maintain freshness.

For optimal freshness, consume within a week.
Pesto can also be frozen for longer storage; just leave out the cheese until ready to use.
