Description

This Grilled Asparagus & Zucchini Salad is a delightful mix of grilled vegetables tossed with a zesty dressing. It’s perfect for a quick, healthy meal or a light dinner, featuring fresh asparagus, zucchini, and a blend of tasty herbs and cheese.


Ingredients

  • 1 lb asparagus, ends trimmed
  • 2 medium zucchini, ends trimmed, cut in half lengthwise and cut into spears
  • drizzle of olive oil, for tossing
  • kosher salt, to taste
  • black pepper, to taste
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 small shallot, minced
  • 1 teaspoon dijon mustard
  • 1 teaspoon honey
  • 1 garlic clove, minced
  • 4 cups chopped butter lettuce
  • 3 green onions, sliced
  • 1/3 cup crumbled feta cheese
  • 1/3 cup chopped pistachios
  • 1/4 cup chopped dill
  • 1/4 cup chopped basil
  • lemon zest, for garnish

Instructions

  1. In a large bowl, combine asparagus and zucchini. Drizzle with olive oil and season with salt and pepper, then toss until evenly coated.
  2. Preheat the grill to medium-high heat. Grill the asparagus for 6 to 8 minutes and zucchini for 3 to 4 minutes per side, until tender and marked.
  3. Once grilled, transfer the veggies to a cutting board and let cool. Then, chop them into 1-inch pieces.
  4. For the dressing, whisk together olive oil, lemon juice, minced shallot, dijon mustard, honey, minced garlic, salt, and pepper in a small bowl.
  5. In a serving bowl, mix the lettuce, grilled asparagus, zucchini, green onions, feta, pistachios, dill, and basil. Pour the dressing over and toss well. Garnish with lemon zest before serving.

Notes

Vegetables can be grilled ahead of time for a quicker assembly.
Feel free to swap in seasonal vegetables or your favorites!
Best served fresh but can be stored in the fridge for up to a day.
