Ingredients

Scale
  • 1 tablespoon light brown sugar, packed
  • 1 ½ teaspoons kosher salt
  • 1 ½ teaspoons garlic powder
  • 1 ½ teaspoon onion powder
  • 1 ½ teaspoon smoked paprika
  • 1 teaspoon freshly ground black pepper
  • chili powder or cayenne pepper, optional
  • 4 pounds chicken legs
  • 1 cup BBQ sauce
  • ¼ cup apricot jam, apple or grape jelly or orange marmalade

Instructions

  1. In a small bowl, combine all the seasonings and spices to create a dry rub.
  2. Pat dry the chicken legs with paper towels, then rub the dry rub evenly over them.
  3. Cover the chicken and marinate in the refrigerator for 1-2 hours or overnight.
  4. In a saucepan, mix BBQ sauce and jam over medium-low heat until thickened.
  5. Preheat the grill with half on high heat and the other half on medium heat.
  6. Place the chicken on the medium heat side, close the lid, and grill for 5 minutes.

  8. When almost done, baste the chicken with the BBQ sauce mix and cook for 2 minutes with the lid closed.
  9. Flip the chicken, baste again, and cook for another 2 minutes or until the internal temperature reaches 165F.
  10. Let the chicken rest for 5-10 minutes before serving.

Notes

Using fresh herbs or sesame seeds can enhance the flavor when serving.
Ensure frozen chicken is completely thawed for even cooking.
Adjust spice levels by modifying the amount of chili or cayenne pepper.
