Description

These Grilled Chicken Sandwiches are packed with flavor and easy to prepare! Featuring juicy grilled chicken, creamy garlic aioli, fresh veggies, and crispy bacon, they make a perfect dish for summer gatherings or weeknight dinners.


Ingredients

  • 4 boneless skinless chicken breasts (about 68 oz each)
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 ½ teaspoons salt
  • Black pepper to taste, optional
  • Avocado oil or other high-heat oil
  • 1 cup mayonnaise
  • 3 cloves garlic, minced
  • 1 tablespoon dijon mustard or add sriracha to taste for a spicy version
  • 1 tablespoon lemon juice
  • 4 brioche buns or ciabatta rolls
  • 2 avocados, sliced
  • 1 large tomato, sliced
  • lettuce leaves or arugula
  • 8 slices crispy bacon
  • ½ red onion, thinly sliced
  • Dill pickles
  • hot honey for drizzling

Instructions

  1. Make the garlic aioli by mixing mayonnaise, minced garlic, dijon mustard, and lemon juice in a bowl until well combined. Cover and set aside.
  2. Dry the chicken breasts with paper towels. Preheat the grill to medium-high heat and combine garlic powder, paprika, and salt. Rub chicken with high-heat oil and the seasoning mix on both sides.
  3. Grill each chicken breast for 4-7 minutes per side until it reaches an internal temperature of 165°F (74°C). After grilling, let the chicken rest for a few minutes.
  4. Slice the brioche buns and lightly toast them on the grill while the chicken is resting.
  5. Spread garlic aioli on the bottom half of each toasted bun and place a grilled chicken breast on each bun.
  6. Top the chicken with avocado slices, tomato slices, and a few lettuce leaves. Add crispy bacon and dill pickles if desired.
  7. Drizzle hot honey over the top to taste, adjusting for spice preference.
  8. Finish with the top bun on each sandwich and serve immediately.

Notes

For extra spice, add more sriracha to the aioli.
Feel free to substitute the buns with your choice of rolls or bread.
The grilled chicken can also be marinated ahead of time for enhanced flavor.
