Description

  • ½ cup pesto
  • 2 tbsp yogurt
  • 2 tbsp mayo
  • 2 tbsp lemon juice
  • 2 tbsp water
  • 2 garlic cloves, minced
  • ¼ tsp salt
  • 1 lb. chicken breast, thin sliced or slice larger breasts in half

Instructions

  1. In a large bowl, mix together the pesto, yogurt, mayonnaise, lemon juice, water, minced garlic, and salt.
  2. Add the chicken to the bowl and toss until thoroughly coated in the marinade.
  3. Cover the bowl and refrigerate for at least 1 hour, or up to 24 hours for enhanced flavor.
  4. Before cooking, remove the chicken from the fridge and let it sit for 20-30 minutes to reach room temperature.
  5. Preheat the grill to medium heat (about 400°F).
  6. Place the marinated chicken on the grill and cook for 3 minutes on each side.
  7. Once cooked, transfer the chicken to a cutting board and let it rest for a few minutes before slicing. Enjoy!
