Description

This Ground Beef and Zucchini Skillet combines lean beef, fresh zucchini, and basil pesto for a delightful, quick meal. Perfect for busy weeknights and packed with flavor!


Ingredients

  • 1 pound lean ground beef
  • 1/3 cup diced shallot
  • 2 cloves garlic, grated or minced
  • 1 teaspoon italian seasoning
  • 2 small zucchini, diced
  • 1 cup corn, frozen or fresh
  • 1/3 cup basil pesto
  • 1 tablespoon balsamic vinegar
  • Chopped basil for garnish

Instructions

  1. Heat a 12-inch skillet over medium-high heat and drizzle in some olive oil. Add the ground beef, crumbling and cooking for 2-3 minutes.
  2. Incorporate the shallots and garlic into the skillet, seasoning with salt, pepper, and Italian seasoning. Cook for another minute until fragrant.
  3. Push the beef mixture to one side of the skillet and add the zucchini and corn, seasoning them lightly with salt and pepper.
  4. Cook until the beef is fully cooked and the zucchini is tender. Stir in the basil pesto and balsamic vinegar until well combined.
  5. Taste and adjust seasoning as needed, then garnish with chopped basil before serving.

Notes

For a spicier kick, add crushed red pepper flakes while cooking the beef.
Feel free to substitute ground turkey or chicken for a leaner option.
Serve with crusty bread or over rice for a heartier meal.
