- ¼ cup powdered sugar
- 1 tablespoon milk

- Preheat the oven to 425°F and line 6 wells of a 12-cup muffin tin with paper liners, skipping every other well for optimal rising.
- In a large bowl, whisk together the flour, baking powder, salt, cinnamon, and nutmeg until well combined, about 30 seconds.
- Add 1.5 cups of diced Granny Smith apples to the dry mixture and toss to coat lightly in flour to keep them suspended in the batter.
- In a separate bowl, whisk the avocado oil, brown sugar, cottage cheese, eggs, and vanilla until smooth and creamy, about 1 minute.
- Pour the wet ingredients into the dry and gently fold until just combined, being careful not to overmix.
- Spoon the batter evenly into the prepared muffin liners, filling each to the top for a big muffin dome.
- In a small bowl, mix the topping brown sugar and cinnamon, then sprinkle it over each muffin. Add the reserved diced apples on top.
