- 1 cup unsweetened cinnamon applesauce
- 3/4 cup milk
- 2 tablespoons maple syrup
- 2 teaspoons vanilla extract
- 2 1/2 cups rolled oats
- 1 1/2 teaspoons cinnamon
- 1/4 teaspoon nutmeg
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 2 cups diced apple
Instructions
- Preheat the oven to 350°F and prepare a muffin tin with silicone liners or by greasing it.
- In a large bowl, combine the wet ingredients: applesauce, milk, maple syrup, and vanilla. Mix well to combine.
- Add the dry ingredients: rolled oats, cinnamon, nutmeg, baking powder, and salt to the wet mixture. Stir well, then fold in the diced apples.
- Using a large cookie scoop, fill the prepared muffin tins with the batter, which will be quite wet.
- Bake for 25-28 minutes or until the tops are golden brown. Allow cooling before serving.
Notes
These muffins can be stored in an airtight container for up to five days.
