Ingredients
Scale
- 1 homemade or store-bought pie crust
- 1 cup granulated sugar
- â…“ cup cornstarch
- 2 tablespoons cocoa powder
- ¼ tsp salt
- 2 ¾ cups whole milk
- 4 large egg yolks
- 6 oz bittersweet chocolate, chopped
- 2 tbsp unsalted butter
- 1 ½ tsp vanilla extract
- 4 large egg whites, room temperature
- 1/4 tsp salt
- ½ tsp cream of tartar
- 2/3 cup granulated sugar
- ½ tsp vanilla extract
Instructions
- Roll out the pie dough and fit it into a 9-inch pie dish. Trim and crimp the edges, then chill in the refrigerator for 30 minutes or in the freezer for 15 minutes to avoid shrinking.
- Use a fork to prick the base of the crust to prevent puffing. Line the crust with parchment paper or foil, covering the bottom and sides. Fill with pie weights, dried beans, or sugar.
- Bake the crust at 375°F for 20 minutes.
- Remove the parchment and weights, and return the crust to the oven. Bake uncovered for an additional 10–15 minutes, or until the bottom is dry and lightly golden brown. Cool completely before adding the filling.
Notes
For best results, use room temperature eggs to achieve better meringue stability.
Make sure the crust is completely cooled before adding the filling to maintain texture.
