Description

This chili combines lean ground beef, beans, and a medley of spices for irresistible flavor. It’s a simple, hearty dish, perfect for a satisfying family dinner on chilly nights.


Ingredients

  • 8 ounces bacon, chopped
  • 1 large yellow onion, diced
  • 1 red bell pepper, seeds and core removed, diced
  • 1 jalapeno pepper, diced
  • 2 carrots, minced
  • 5 cloves garlic, minced
  • 2 pounds lean ground beef
  • 2 teaspoons light brown sugar
  • 2 and 1/2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 3 teaspoons chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon garlic powder
  • 1/2 teaspoon cayenne pepper
  • 1 6 ounce can tomato paste
  • 1 28 ounce can crushed tomatoes with basil
  • 3 15 ounce cans beans (1 red kidney bean, 1 black bean, 1 pinto bean recommended), drained and rinsed
  • 3 cups beef broth or 2 cups beef broth and 1 cup pilsner beer

Instructions

  1. In a large Dutch oven, fry the chopped bacon over medium high heat until crispy. Drain on a paper towel and set aside.
  2. In the same pan, keep the bacon grease and sauté the onion, bell pepper, jalapeño, and carrots until soft, about 8 minutes. Add the minced garlic and cook for an additional minute.
  3. Add the ground beef and brown it gently, cooking until deeply browned and cooked through for about 8 to 10 minutes.
  4. Mix in the brown sugar, salt, pepper, and spices, cooking until fragrant, about 1 minute.
  5. Incorporate the tomato paste, ensuring it breaks up in the mixture. Cook for around 2 minutes, then stir in the crushed tomatoes and cook for another 2 minutes.
  6. Add the cooked bacon, beans, and broth (along with the beer if using) and stir well. Bring to a boil, then reduce the heat and simmer for 2 hours, stirring occasionally and adding broth if it gets too thick.
  7. Serve the chili in bowls with your choice of garnishes.

Notes

For a spicier chili, add more jalapeños or cayenne pepper as preferred.
Leftover chili can be stored in the refrigerator for up to 3 days or frozen for later use.
Consider garnishing with sour cream, shredded cheese, or fresh cilantro.
