Description

This Jalapeno Popper Cucumber Salad offers an irresistible flavor combination of fresh cucumbers, spicy jalapeños, creamy cheese, and crispy bacon. Simple to prepare and perfect for a quick meal or as a side dish for gatherings, it’s a healthy mix that pleases both the palate and the eye!


Ingredients

  • 2 large cucumbers, thinly sliced (about 4 cups)
  • 1 large jalapeño, seeded and finely diced
  • ¼ cup (40 g) red onion, finely diced
  • 3 tablespoons cream cheese, softened
  • 2 tablespoons sour cream
  • 1 tablespoon dry ranch seasoning
  • ¼ cup (28 g) sharp cheddar cheese, finely shredded
  • 2 slices bacon, cooked and crumbled

Instructions

  1. In a large bowl with a tight-fitting lid, combine sliced cucumbers, diced jalapeño, and red onion. Set aside.
  2. In a small bowl, mix together softened cream cheese, sour cream, and dry ranch seasoning until mostly smooth.
  3. Gently incorporate the shredded cheese and crumbled bacon into the mixture.
  4. Pour or spoon the cream cheese mixture over the vegetables in the large bowl.
  5. Secure the lid and gently shake to coat the vegetables evenly, or stir carefully to avoid crushing the cucumbers. Scrape down the sides as needed and mix again gently.
  6. Serve immediately or refrigerate for at least 30 minutes to enhance the flavor before serving.

Feel free to adjust jalapeño quantity for a milder or spicier taste.
