This juicy grilled tequila lime marinated chicken features tender chicken thighs soaked in a flavorful marinade made from tequila, lime juice, and spices. It’s perfect for a quick weeknight dinner or any gathering, simply grilled to perfection for mouthwatering results.

- 2 lbs boneless skinless chicken thighs
- ¼ cup tequila blanco
- ¼ cup lime juice
- 2 tablespoons olive oil
- 1 tablespoon dried cilantro
- 1 tablespoon packed dark brown sugar
- 1 tablespoon garlic paste
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon tomato powder
- ½ teaspoon chipotle powder
- kosher salt & fresh ground black pepper, to taste
- fresh sliced lime, chopped cilantro- for garnishes, optional
Instructions
- Place chicken thighs in a large resealable bag or bowl.
- Add tequila, lime juice, olive oil, cilantro, brown sugar, garlic paste, cumin, paprika, tomato powder, chipotle powder, salt, and pepper. Toss to coat the chicken evenly.
- Seal the bag or cover the bowl and refrigerate for at least 2 hours, preferably overnight.
- Remove marinated chicken from the fridge and let it sit at room temperature before grilling.
- Preheat the grill to medium-high heat (375-450°F) and grease the grates.
- Place chicken on hot grates, grill with the lid closed for 4-5 minutes per side until internal temperature reaches 165°F.
- Remove chicken from grill and let rest for 10 minutes before serving.
- If using a stovetop grill pan, preheat the pan, brush with oil, and grill chicken in batches for 5-7 minutes per side or until done.
- Garnish with sliced lime and cilantro, if desired.
Notes
Marinate overnight for the best flavor.
Ensure the chicken reaches 165°F to be safely cooked.
Feel free to use fresh cilantro for a brighter flavor.
