Description

This juicy grilled tequila lime marinated chicken features tender chicken thighs soaked in a flavorful marinade made from tequila, lime juice, and spices. It’s perfect for a quick weeknight dinner or any gathering, simply grilled to perfection for mouthwatering results.


Ingredients

  • 2 lbs boneless skinless chicken thighs
  • ¼ cup tequila blanco
  • ¼ cup lime juice
  • 2 tablespoons olive oil
  • 1 tablespoon dried cilantro
  • 1 tablespoon packed dark brown sugar
  • 1 tablespoon garlic paste
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon tomato powder
  • ½ teaspoon chipotle powder
  • kosher salt & fresh ground black pepper, to taste
  • fresh sliced lime, chopped cilantro- for garnishes, optional

Instructions

  1. Place chicken thighs in a large resealable bag or bowl.
  2. Add tequila, lime juice, olive oil, cilantro, brown sugar, garlic paste, cumin, paprika, tomato powder, chipotle powder, salt, and pepper. Toss to coat the chicken evenly.
  3. Seal the bag or cover the bowl and refrigerate for at least 2 hours, preferably overnight.
  4. Remove marinated chicken from the fridge and let it sit at room temperature before grilling.
  5. Preheat the grill to medium-high heat (375-450°F) and grease the grates.
  6. Place chicken on hot grates, grill with the lid closed for 4-5 minutes per side until internal temperature reaches 165°F.
  7. Remove chicken from grill and let rest for 10 minutes before serving.
  8. If using a stovetop grill pan, preheat the pan, brush with oil, and grill chicken in batches for 5-7 minutes per side or until done.
  9. Garnish with sliced lime and cilantro, if desired.

Notes

Marinate overnight for the best flavor.
Ensure the chicken reaches 165°F to be safely cooked.
Feel free to use fresh cilantro for a brighter flavor.
