  • juice of 1 lemon
  • zest of 1 lemon
  • 1/3 cup powdered erythritol
  • 2 tablespoons lemon juice
  • lemon zest or sliced almonds for decoration

Instructions

  1. Preheat the oven to 350°F and prepare a loaf pan with parchment paper.
  2. Beat the eggs and erythritol together in a bowl until pale and fluffy.
  3. Add Greek yogurt, vanilla extract, lemon zest, and lemon juice; mix thoroughly.
  4. Fold in almond flour, baking powder, and salt until a smooth batter forms.
  5. Transfer the batter to the prepared loaf pan and spread it evenly.
  6. Bake for 40-45 minutes until the top is set and lightly golden; allow it to cool completely before adding glaze.
  7. For the glaze, combine powdered erythritol with lemon juice until smooth, then drizzle it over the cooled bread.
  8. Garnish with additional lemon zest or sliced almonds if desired.

Ensure the loaf is completely cool before glazing to prevent the frosting from melting.
