Ingredients
Scale
- 8 ounces spaghetti
- 1 teaspoon kosher salt
- 4 tablespoons unsalted butter
- 3 garlic cloves, minced
- zest of one lemon
- juice of one lemon
- 1/2 teaspoon kosher salt
- dash freshly ground black pepper
- 1/3 cup grated parmesan cheese
Instructions
- Boil a large pot of water and add 1 teaspoon of kosher salt. Cook the spaghetti according to package directions, reserving 1 cup of pasta water before draining.
- While the spaghetti cooks, heat a large skillet over medium heat and melt the unsalted butter. Cook the minced garlic and lemon zest in the skillet for about one minute until fragrant.
- Add the lemon juice, 1/2 cup of reserved pasta water, 1/2 teaspoon kosher salt, and a dash of freshly ground black pepper to the skillet, whisking to combine.
- Toss the drained spaghetti in the skillet with the sauce, and mix in the grated parmesan cheese. If the pasta is too sticky, add more reserved pasta water until a smooth sauce forms. Adjust salt and pepper to taste.
