Ingredients

  • 8 ounces spaghetti
  • 1 teaspoon kosher salt
  • 4 tablespoons unsalted butter
  • 3 garlic cloves, minced
  • zest of one lemon
  • juice of one lemon
  • 1/2 teaspoon kosher salt
  • dash freshly ground black pepper
  • 1/3 cup grated parmesan cheese

Instructions

  1. Boil a large pot of water and add 1 teaspoon of kosher salt. Cook the spaghetti according to package directions, reserving 1 cup of pasta water before draining.
  2. While the spaghetti cooks, heat a large skillet over medium heat and melt the unsalted butter. Cook the minced garlic and lemon zest in the skillet for about one minute until fragrant.
  3. Add the lemon juice, 1/2 cup of reserved pasta water, 1/2 teaspoon kosher salt, and a dash of freshly ground black pepper to the skillet, whisking to combine.
  4. Toss the drained spaghetti in the skillet with the sauce, and mix in the grated parmesan cheese. If the pasta is too sticky, add more reserved pasta water until a smooth sauce forms. Adjust salt and pepper to taste.

Notes

Feel free to add grilled chicken or shrimp for extra protein.
For a lighter version, substitute butter with olive oil.
Use fresh herbs like basil or parsley for added flavor.
