Ingredients

  • 3 tablespoons soy sauce
  • 1/4 cup water
  • 1 tablespoon brown sugar
  • 680g diced chicken breast or thighs
  • 1 medium white onion, diced
  • 2 medium carrots, diced
  • 8 cloves garlic, minced, divided
  • 110g frozen peas
  • 900g cooked rice
  • 6 tablespoons unsalted butter
  • 2 tablespoons toasted sesame oil
  • 3 large eggs, beaten
  • 1 large diced mango
  • 3 tablespoons olive oil
  • 1/2 teaspoon freshly cracked black pepper

Instructions

  • Mix soy sauce, water, and brown sugar in a bowl and microwave.
  • Marinate the diced chicken in the mixture.
  • Heat oil in a pan and cook the chicken until browned.
  • Add garlic and butter to the chicken and sauté.
  • Sauté onions, carrots, and remaining garlic in the same pan.
  • Add frozen peas and cook until tender.
  • Add rice to the pan and fry until crispy.
  • Scramble eggs in a small area of the pan and mix into the rice.
  • Fold in the chicken and diced mango gently.

Notes

Use day-old rice for the best texture.
Feel free to swap veggies based on availability.
Adding mango at the end keeps it fresh and intact.
