Description

Treat yourself to Marinated Venison Steak with Garlic Herb Butter, a delightful dish featuring mouthwatering flavors from venison, garlic, and fresh herbs. Perfect for a quick dinner or a special occasion.

Ingredients

Scale
  • 1 pound venison steaks
  • ¼ cup olive oil
  • 1 tablespoon olive oil for cooking
  • 3 tablespoons tamari or soy sauce
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons balsamic vinegar
  • ½ tablespoon dijon mustard
  • 1 tablespoon Worcestershire sauce
  • 3–4 garlic cloves minced
  • ½ teaspoon black pepper
  • lemon wedges, for serving
  • 4 tablespoons salted butter room temperature
  • 1 tablespoon chopped chives
  • 1 teaspoon fresh thyme leaves
  • 1 garlic clove, minced
  • pinch of salt
  • pinch of black pepper

Instructions

  1. In a large bowl or shallow dish, whisk together all marinade ingredients.
  2. Add the venison steaks, turning to coat all sides. Cover and refrigerate for 4-12 hours, not exceeding 24 hours.
  3. About 30 minutes before cooking, remove the steaks from the marinade, allowing excess to drip off. Place on a clean plate to reach room temperature.
  4. Prepare the garlic herb butter by mixing all relevant ingredients in a small bowl until combined. Set aside.
  5. Heat a cast iron skillet or grill to medium-high heat, adding the remaining tablespoon of olive oil if using a skillet, or greasing the grill grates.
  6. Cook the steaks for 4-6 minutes per side, until reaching an internal temperature of 130°F for medium-rare. Adjust heat if charring too quickly. Note that the cooking time may vary based on steak thickness and internal temperature will rise while resting.
  7. Transfer cooked steaks to a clean plate, topping each with a spoonful of garlic herb butter. Let rest for 5-10 minutes before serving.
  8. Serve with lemon wedges and the remaining garlic herb butter.

Notes

Marinating the steaks for at least 4 hours enhances flavor, but do not exceed 24 hours in the marinade.
Allowing the steaks to reach room temperature before cooking ensures even cooking.
For best results, check the steak’s internal temperature with a meat thermometer.
