- 1 deep dish pie shell (16 oz)
- 1 cup diced chicken
- 2 cups fresh spinach
- ¼ cup sun dried tomatoes, diced
- 2 green onions, thinly sliced
- ½ cup shredded mozzarella cheese
- ¼ cup grated parmesan cheese
- 6 large eggs
- ½ cup heavy cream
- ½ cup milk
- ¼ tsp salt
- ¼ tsp ground black pepper
Instructions
- Preheat the oven to 400ËšF and pre-bake the pie crust by lining it with parchment and filling it with dried beans. Bake for 12-15 minutes until golden brown, then let cool.
- Lower the oven temperature to 350ËšF. In a bowl, whisk together the eggs, heavy cream, milk, salt, and pepper until well combined.
- Chop the spinach and spread it in the pie crust. Layer the chicken, sun dried tomatoes, green onions, and cheeses on top of the spinach.
- Pour the egg mixture over the filled quiche. Place it on a baking sheet and bake for 45-55 minutes until the center is set.
- Let the quiche sit for 20 minutes, then serve warm or at room temperature.
Notes
Use dry beans to weigh down the crust to prevent it from bubbling up during baking.
Allowing the quiche to sit before slicing helps maintain its shape when served.
