- 1 lb meat, chicken sausage, bacon, ground beef, etc.
- 2 cups veggies, tomatoes, zucchini, bell pepper, red onion, mushrooms
- Pinch salt
- 12 eggs
- 1 cup cottage cheese
- 10 burrito-sized tortillas
- 1 cup cheddar cheese, shredded
Instructions
- Cook the meat of your choice in a medium skillet over medium heat until fully cooked, then remove to a bowl using a slotted spoon.
- In the same skillet, add your chosen vegetables and a pinch of salt, sautéing until soft for about 3-5 minutes.
- Whisk together the eggs and cottage cheese in a large bowl, seasoning with salt and pepper. Add this mixture to the skillet with the vegetables and scramble until the eggs are cooked through.
- Assemble the burritos by placing one tortilla on a flat surface. Add ¾ cup of the egg mixture, followed by 2 tablespoons of the cooked meat and 2 tablespoons of cheese on top.
- Fold in the sides of the tortilla and roll it up to form the burrito. Repeat until all ingredients are used up.
- If preparing in advance, wrap each burrito in foil and place on a baking sheet in the freezer to prevent them from sticking. Once frozen, transfer them to a plastic bag or freezer-safe container, where they can last for up to 2 months.
- Alternatively, store them wrapped in foil in the fridge for up to 1 week.
- To reheat, warm the burritos in the microwave until heated through, or bake in the oven at 375°F for 15-20 minutes.
