Description

These Meal Prep Breakfast Burritos are packed with flavor and are easy to prepare, featuring a mouthwatering combination of eggs, sausage, and veggies, making them an ideal choice for a quick, hearty breakfast or a healthy meal prep option.


Ingredients

Scale
  • 1 lb meat, chicken sausage, bacon, ground beef, etc.
  • 2 cups veggies, tomatoes, zucchini, bell pepper, red onion, mushrooms
  • Pinch salt
  • 12 eggs
  • 1 cup cottage cheese
  • 10 burrito-sized tortillas
  • 1 cup cheddar cheese, shredded

Instructions

  1. Cook the meat of your choice in a medium skillet over medium heat until fully cooked, then remove to a bowl using a slotted spoon.
  2. In the same skillet, add your chosen vegetables and a pinch of salt, sautéing until soft for about 3-5 minutes.
  3. Whisk together the eggs and cottage cheese in a large bowl, seasoning with salt and pepper. Add this mixture to the skillet with the vegetables and scramble until the eggs are cooked through.
  4. Assemble the burritos by placing one tortilla on a flat surface. Add ¾ cup of the egg mixture, followed by 2 tablespoons of the cooked meat and 2 tablespoons of cheese on top.
  5. Fold in the sides of the tortilla and roll it up to form the burrito. Repeat until all ingredients are used up.
  6. If preparing in advance, wrap each burrito in foil and place on a baking sheet in the freezer to prevent them from sticking. Once frozen, transfer them to a plastic bag or freezer-safe container, where they can last for up to 2 months.
  7. Alternatively, store them wrapped in foil in the fridge for up to 1 week.
  8. To reheat, warm the burritos in the microwave until heated through, or bake in the oven at 375°F for 15-20 minutes.

Notes

Customize your burritos by choosing your favorite meats and vegetables for added variety.
For a spicier option, add some jalapeño or hot sauce when combining the egg mixture.
