- 1 cup andes creme de menthe baking chips
- ½ cup unsalted butter softened
- ½ cup milk
- 4 cups powdered sugar
- ½ teaspoon peppermint extract
- 1 drop green food coloring
- ¾ cup mini semi-sweet chocolate chips
Instructions
- Preheat the oven to 400°F and line a 13×9 baking dish with parchment paper.
- In a small saucepan over medium-high heat, combine the butter, cocoa powder, and oil. Bring to a boil while whisking continuously, then remove from heat.
- In a large mixing bowl, mix together the granulated sugar, eggs, and buttermilk. Gradually add the butter mixture, being careful not to over mix. Stir in the flour, baking soda, and salt until just combined. Gently fold in the Andes mints.
- Pour the brownie batter into the prepared baking dish and bake for 20 minutes. Remove from the oven and allow to cool.
- Once cooled, make the frosting. In a large mixing bowl, use an electric mixer to beat the softened butter for 3-4 minutes until it turns pale. Add in the milk, powdered sugar, peppermint extract, and food coloring, beating for an additional 3-5 minutes until the frosting is light and fluffy (add more milk if necessary). Fold in the mini chocolate chips.
- Spread the frosting over the cooled brownies. Refrigerate for 2 hours to set before cutting into squares and enjoying.
Notes
Use parchment paper for easy removal of the brownies from the pan after baking.
Feel free to adjust the amount of peppermint extract based on your flavor preference.
For a more festive look, add extra green food coloring to the frosting.
