Description

This Mixed Berry Crisp is a delightful dessert featuring juicy strawberries and blueberries topped with a crunchy oat mixture. Simple to prepare and perfect for gatherings or cozy nights at home, it’s sure to satisfy your sweet cravings!


Ingredients

  • ¾ cup (93g) all purpose flour
  • ¾ cup (64g) quick cook oats
  • ¾ cup (150g) packed brown sugar
  • 1 teaspoon cinnamon
  • 6 tablespoons (78g) cold unsalted butter, diced
  • ¼ teaspoon salt
  • 1 pound strawberries, hulled and sliced
  • 2 cups blueberries, frozen or fresh
  • ½ cup (50g) granulated sugar
  • 1 tablespoon lemon juice
  • 3 tablespoons (24g) cornstarch

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together the flour, brown sugar, oats, cinnamon, and salt to create the crumble.
  3. Cut in the cold butter with a pastry cutter until the mixture resembles small crumbs.
  4. In another bowl, combine the hulled and sliced strawberries and blueberries with the granulated sugar, lemon juice, and cornstarch, then gently toss to coat the fruit.
  5. Spread the berry mixture in the bottom of an 8-inch square pan.
  6. Top the berries evenly with the crumble topping and gently press down.
  7. Bake for 30-33 minutes, or until the topping is golden brown and crunchy. Let it cool slightly before serving.

Notes

Serve warm or at room temperature with whipped cream or ice cream for a delightful treat.
If using frozen berries, there is no need to thaw them before baking; just add a few extra minutes to the cooking time.
Allowing the crisp to cool helps the filling to thicken up better before serving.
