Morir Soñando Chia Pudding is a delightful blend of flavors with chia seeds and citrus that gel perfectly. This easy recipe creates a healthy dessert, ideal for a quick treat or a nutritious breakfast.

- 1/2 cup high-protein plant-based yogurt or skyr
- 2 tsp orange zest
- 1/2 cup freshly squeezed orange juice
- juice of 1 lime or 2 tbsp extra orange juice
- 2 tbsp agave syrup
- 1 tsp dominican vanilla or vanilla paste/extract
- 1/4 tsp kosher salt
- 3/4 cup non-dairy evaporated milk
- 1/3 cup chia seeds
- 3 tbsp rolled oats
- 2–3 pitted medjool dates
- 2 tbsp coconut flakes
- 2 tbsp raw cashews
- 1 tsp orange zest
- 1/2 tsp dominican vanilla or vanilla paste/extract
- 1/4 tsp kosher salt
Instructions
- Blend yogurt, orange zest, orange juice, and lime in a blender for one minute.
- Add agave, vanilla, and salt, and continue blending while slowly adding evaporated milk.
- Taste and adjust sweetness or salt as necessary.
- Stir in chia seeds and mix evenly. Cover and refrigerate for 10 minutes.
- After 10 minutes, stir again to break up clumps and refrigerate overnight.
- Pulse oats, medjool dates, coconut flakes, cashews, orange zest, vanilla, and salt in a mini processor until crumbly.
- Serve the chia seed mixture in bowls or jars and top with the crumble.
Notes
For added sweetness, adjust the amount of agave syrup to taste.
Chia pudding can be stored in the fridge for up to 5 days.
Feel free to substitute with your favorite plant-based yogurt.
