- ½ cup boiling water
- ½ cup cold water

- 1½ cups diced seedless watermelon, blotted dry
- 1 (9-inch) graham cracker pie crust

Instructions
- In a medium bowl, combine the watermelon Jell-O with ½ cup of boiling water and stir until fully dissolved.
- Add ½ cup of cold water and mix well. Allow it to sit for 10 to 15 minutes until it cools down without beginning to set.
- Gently fold in the Cool Whip until the mixture becomes smooth and creamy, then fold in the diced watermelon.
- Transfer the filling into the graham cracker crust, smoothing the top.
- Refrigerate for at least 4 hours until firm.
- When ready to serve, slice and enjoy chilled. For decoration, top with Cool Whip, fresh watermelon cubes, or mint leaves if desired.
- Store covered in the refrigerator for up to 3 days; do not freeze.
