This No-Bake Watermelon Pie is a delightful summer treat combining refreshing flavors of watermelon and cream.   • 1 (3.6-ounce) box watermelon-flavored jell-o
  • ½ cup boiling water
  • ½ cup cold water
  • 1 (8-ounce) tub cool whip, thawed
  • 1½ cups diced seedless watermelon, blotted dry
  • 1 (9-inch) graham cracker pie crust
  • watermelon slices, mint leaves, optional decoration

Instructions

  1. In a medium bowl, combine the watermelon Jell-O with ½ cup of boiling water and stir until fully dissolved.
  2. Add ½ cup of cold water and mix well. Allow it to sit for 10 to 15 minutes until it cools down without beginning to set.
  3. Gently fold in the Cool Whip until the mixture becomes smooth and creamy, then fold in the diced watermelon.
  4. Transfer the filling into the graham cracker crust, smoothing the top.
  5. Refrigerate for at least 4 hours until firm.
  6. When ready to serve, slice and enjoy chilled. For decoration, top with Cool Whip, fresh watermelon cubes, or mint leaves if desired.
  7. Store covered in the refrigerator for up to 3 days; do not freeze.
