Description

These Paleo Apple Pie Bars with Crumble Topping bring a delightful twist to a classic dessert. Naturally sweetened and easy to prepare, they are perfect for satisfying your sweet tooth while keeping it healthy. Featuring almond and tapioca flour crust, fresh apples, and a crumbly topping, these bars make a great treat for gatherings or a comforting after-dinner snack.

Ingredients

Scale
  • 2 cups blanched almond flour
  • 1/2 cup tapioca flour or arrowroot starch
  • 1/2 cup maple sugar or coconut sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon fine sea salt
  • 1/2 cup refined coconut oil, softened but not melted
  • 1 large egg yolk
  • 1 teaspoon pure vanilla extract
  • 4 medium apples, peeled and diced
  • 2 tablespoons water
  • 1 tablespoon fresh lemon juice
  • 1/4 cup maple sugar or coconut sugar
  • 1 1/2 teaspoons cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon fine sea salt
  • 1 tablespoon tapioca flour or arrowroot starch
  • 2/3 cup full-fat coconut cream
  • 1/3 cup coconut sugar
  • 1 teaspoon pure vanilla extract
  • 1/8 teaspoon fine sea salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8 x 8-inch metal baking pan with parchment paper.
  2. In a large mixing bowl, combine almond flour, tapioca flour, maple sugar, cinnamon, and sea salt.
  3. Add softened coconut oil, egg yolk, and vanilla extract. Mix until a moist, crumbly dough forms.
  4. Reserve 1 generous cup of the mixture for the crumble topping and chill it.
  5. Press the remaining dough evenly into the prepared baking pan, compacting it well especially around the edges.
  6. Bake the crust for 10–12 minutes until set and lightly golden. Let it cool slightly.

Notes

Ensure the coconut oil is softened but not melted for the best texture of the crust.
Using fresh apples like Honeycrisp, Pink Lady, or Granny Smith will enhance the flavor of the filling.
The reserved crumble can be topped on the apple filling before baking for added texture.
