- 2 boneless skinless chicken breasts cut in half lengthwise
- ¾ cup grated parmesan cheese divided
- ½ cup shredded provolone cheese
- 6 tablespoons unsalted butter melted and divided

- 1 teaspoon onion powder
- ½ teaspoon salt
- ½ teaspoon pepper
- ½ cup panko breadcrumbs
Instructions
- Preheat a grill pan over medium-high heat.
- Mix together 4 tablespoons of melted butter, garlic powder, onion powder, salt, and pepper in a small bowl. Brush each chicken breast with the mixture.
- Cook the chicken breasts on the grill pan for 3-4 minutes, then flip the chicken.
- Combine ½ cup of Parmesan cheese and provolone cheese in a medium bowl and set aside.
- Top the chicken with the cheese mixture and cook for another 3-4 minutes, ensuring the internal temperature reaches 165°F.
- Transfer the chicken to a baking sheet lined with foil.
- Preheat your oven’s broiler on high.
- In a separate bowl, mix panko breadcrumbs with the remaining ¼ cup Parmesan cheese and remaining 2 tablespoons melted butter. Sprinkle over chicken.
- Broil under high heat for 1-2 minutes or until breadcrumbs are golden, watching carefully to prevent burning.
- Remove from the broiler and let the chicken rest for 5 minutes before serving.
