Ingredients

  • 4 cups sliced peaches (about 34 peaches)
  • 1 1/2 cups blueberries
  • 1 tablespoon fresh lemon juice
  • 1/4 cup granulated sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1 teaspoon vanilla extract
  • 6 tablespoons unsalted butter
  • 1 cup white whole wheat flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 3/4 cup milk (dairy or non-dairy)

Instructions

  1. Combine peaches, blueberries, sugar, lemon juice, cinnamon, ginger, and a pinch of salt in a saucepan over medium heat. Cook for 2-3 minutes until the sugar dissolves, stirring often.
  2. Remove from heat and mix in vanilla extract. Set aside.
  3. Cut butter into pieces and add to a 9×13 baking dish. Place the dish in the oven to melt the butter while preheating to 350° F.
  4. In a bowl, mix flour, sugar, baking powder, salt, cinnamon, and ginger. Gradually stir in the milk until just combined.
  5. Once the butter is melted, pour the batter over it in the baking dish, smoothing it into an even layer.
  6. Spoon the fruit filling over the batter, optionally sprinkling with turbinado sugar, then return to the oven.
  7. Bake for 35-40 minutes at 350° F until golden brown and crisp. Cool for 5 minutes before serving, ideally with vanilla ice cream.

Notes

For extra flavor, add a pinch of nutmeg to the fruit filling.
This cobbler is best enjoyed warm, ideally with a scoop of ice cream.
Store leftovers in an airtight container in the refrigerator for up to three days.
