- 4 cups sliced peaches (about 3–4 peaches)
- 1 1/2 cups blueberries
- 1 tablespoon fresh lemon juice
- 1/4 cup granulated sugar
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground ginger
- 1 teaspoon vanilla extract
- 6 tablespoons unsalted butter
- 1 cup white whole wheat flour
- 1/2 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground ginger
- 1/4 teaspoon salt
- 3/4 cup milk (dairy or non-dairy)
Instructions
- Combine peaches, blueberries, sugar, lemon juice, cinnamon, ginger, and a pinch of salt in a saucepan over medium heat. Cook for 2-3 minutes until the sugar dissolves, stirring often.
- Remove from heat and mix in vanilla extract. Set aside.
- Cut butter into pieces and add to a 9×13 baking dish. Place the dish in the oven to melt the butter while preheating to 350° F.
- In a bowl, mix flour, sugar, baking powder, salt, cinnamon, and ginger. Gradually stir in the milk until just combined.
- Once the butter is melted, pour the batter over it in the baking dish, smoothing it into an even layer.
- Spoon the fruit filling over the batter, optionally sprinkling with turbinado sugar, then return to the oven.
- Bake for 35-40 minutes at 350° F until golden brown and crisp. Cool for 5 minutes before serving, ideally with vanilla ice cream.
Notes
For extra flavor, add a pinch of nutmeg to the fruit filling.
This cobbler is best enjoyed warm, ideally with a scoop of ice cream.
