- 1.5 kg / 3 lb yellow peaches, peeled and cut into wedges
- 1/4 cup caster sugar
- 1 tsp cornflour
- 1 tbsp lemon juice
- 1/8 tsp salt
- 1 1/4 cups plain flour
- 1/3 cup caster sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 85 g unsalted butter
- 1/2 cup plain yoghurt
- 1 tsp demerara sugar
- 1/2 tsp cinnamon powder
- Ice cream or whipped cream
Instructions
- Combine the peaches and sugar in a large bowl and toss. Let marinate for 40 minutes.
- While the peaches macerate, preheat the oven to 210°C (410°F).
- Drain the peaches in a colander but save the juices.
- Pour 1/4 cup of the reserved juice into a bowl. Add cornflour, salt, and 1 tbsp lemon juice. Mix thoroughly.
- Toss the peaches in the prepared syrup, adjusting sweetness with lemon or extra sugar to taste.
- Transfer the peaches and syrup into a medium baking dish and bake for 12 minutes.
Notes
For a sweeter cobbler, adjust the amount of sugar based on peach ripeness.
Serve with ice cream or whipped cream for added richness.
