Description

Ingredients

  • 1.5 kg / 3 lb yellow peaches, peeled and cut into wedges
  • 1/4 cup caster sugar
  • 1 tsp cornflour
  • 1 tbsp lemon juice
  • 1/8 tsp salt
  • 1 1/4 cups plain flour
  • 1/3 cup caster sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 85 g unsalted butter
  • 1/2 cup plain yoghurt
  • 1 tsp demerara sugar
  • 1/2 tsp cinnamon powder
  • Ice cream or whipped cream

Instructions

  1. Combine the peaches and sugar in a large bowl and toss. Let marinate for 40 minutes.
  2. While the peaches macerate, preheat the oven to 210°C (410°F).
  3. Drain the peaches in a colander but save the juices.
  4. Pour 1/4 cup of the reserved juice into a bowl. Add cornflour, salt, and 1 tbsp lemon juice. Mix thoroughly.
  5. Toss the peaches in the prepared syrup, adjusting sweetness with lemon or extra sugar to taste.
  6. Transfer the peaches and syrup into a medium baking dish and bake for 12 minutes.

Notes

For a sweeter cobbler, adjust the amount of sugar based on peach ripeness.
Serve with ice cream or whipped cream for added richness.
Ensure to check the peaches after baking to maintain desired texture.
