Description

These Peach Crumb Bars are a delightful dessert featuring a buttery crumb base loaded with fresh peaches. Simple and quick to prepare, they’re perfect for sharing or a sweet treat after dinner!


Ingredients

  • 1 cup unsalted butter, melted
  • ½ cup granulated sugar
  • 2 teaspoons vanilla extract
  • 2½ cups all-purpose flour
  • ¼ teaspoon salt
  • 5 cups peaches, peeled and diced (about 56 medium peaches)
  • ⅓ cup light brown sugar
  • 2 tablespoons granulated sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • ¾ cup old-fashioned oats
  • ¾ cup all-purpose flour
  • ½ cup packed light brown sugar
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon sea salt
  • 6 tablespoons unsalted butter, melted
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (180°C). Line a 9-inch square baking pan with parchment paper, allowing overhang on two sides for easy removal.
  2. In a large bowl, mix together the melted butter, granulated sugar, and vanilla extract until well combined.
  3. Add in the flour and salt, mixing until a soft dough forms.
  4. Press the dough evenly into the bottom of the prepared baking pan.
  5. Bake the crust for 15 minutes, or until the edges start to turn a light golden color.

Notes

Ensure to peel the peaches for a smoother texture, or leave the skin on if preferred.
For added flavor, sprinkle some additional cinnamon over the peach filling before baking.
Let the bars cool completely before slicing for cleaner cuts.
