- ½ cup sugar
- 1 lemon, juiced
- ½ lemon, zest
Instructions
- Combine diced peaches, sugar, lemon juice, and lemon zest in a large saucepan.
- Bring the mixture to a rapid boil and let it boil for 20 minutes while stirring every couple of minutes. Use a wooden spoon to help break down the peaches until the mixture thickens and coats the back of a spoon.
- Pour the preserves into a large glass jar or several smaller jars with a sealed lid and refrigerate. Store for up to 2 months or longer.
