Description

This Pimento Cheese Pasta Salad is a delightful combination of creamy cheddar cheese, crispy bacon, and fresh veggies. Perfect for a quick dinner or a tasty potluck dish, it’s easy to prepare and will please everyone at your table.


Ingredients

  • 12 oz. uncooked short pasta
  • 2/3 cup mayonnaise
  • 1 Tablespoon Dijon mustard
  • 2 teaspoons Worcestershire sauce
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 2 cups shredded cheddar cheese
  • 1/2 cup diced red onion
  • 1 (4-oz.) jar diced pimento peppers, drained
  • 8 slices bacon, cooked, crumbled and divided
  • 1 Tablespoon chopped fresh chives

Instructions

  1. Bring a large pot of salted water to a boil. Add the pasta and cook until al dente. Drain and rinse the pasta with cold water, then drain thoroughly again and set aside.
  2. In a large bowl, whisk together the mayonnaise, Dijon mustard, Worcestershire sauce, garlic powder, smoked paprika, and a pinch of salt and pepper.
  3. Mix in the cheddar cheese, diced red onion, and pimento peppers. Then fold in the pasta along with half of the crumbled bacon.
  4. Garnish the top of the pasta salad with the remaining crumbled bacon and chopped chives before serving.

Notes

Feel free to add more vegetables or swap out the pasta for a gluten-free variety if desired.
You can prepare this dish a day in advance for flavors to meld together. Just keep it refrigerated until serving.
