This Pimento Cheese Pasta Salad is a delightful combination of creamy cheddar cheese, crispy bacon, and fresh veggies. Perfect for a quick dinner or a tasty potluck dish, it’s easy to prepare and will please everyone at your table.

- 12 oz. uncooked short pasta
- 2/3 cup mayonnaise
- 1 Tablespoon Dijon mustard
- 2 teaspoons Worcestershire sauce
- 1/2 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- 2 cups shredded cheddar cheese
- 1/2 cup diced red onion
- 1 (4-oz.) jar diced pimento peppers, drained
- 8 slices bacon, cooked, crumbled and divided
- 1 Tablespoon chopped fresh chives
Instructions
- Bring a large pot of salted water to a boil. Add the pasta and cook until al dente. Drain and rinse the pasta with cold water, then drain thoroughly again and set aside.
- In a large bowl, whisk together the mayonnaise, Dijon mustard, Worcestershire sauce, garlic powder, smoked paprika, and a pinch of salt and pepper.
- Mix in the cheddar cheese, diced red onion, and pimento peppers. Then fold in the pasta along with half of the crumbled bacon.
- Garnish the top of the pasta salad with the remaining crumbled bacon and chopped chives before serving.
Notes
Feel free to add more vegetables or swap out the pasta for a gluten-free variety if desired.
You can prepare this dish a day in advance for flavors to meld together. Just keep it refrigerated until serving.
