These Plum Bars offer a delightful blend of buttery crust and sweet plums. Perfect for dessert lovers, they are simple to prepare and ideal for sharing with family.

- ½ cup butter, cold
- 1 egg, whisked
- 2 tbsp milk
- 4 plums, diced small
- ¼ cup sugar
- 2 tbsp all purpose flour
- ½ tsp vanilla extract
Instructions
- Preheat the oven to 400° F and line an 8×8 baking dish with parchment paper.
- In a large bowl, mix together the flour, sugar, baking powder, and salt. Use a cheese grater to grate the cold butter into the bowl.
- Combine the mixture until the butter resembles small pebbles, then add the whisked egg and milk, stirring to mix well.
- In another medium bowl, combine the diced plums with additional sugar, flour, and vanilla extract, and mix well.
- Press â…” of the crust mixture into the prepared baking pan using your hands.
- Spread the plum mixture evenly over the crust in the pan, then sprinkle the remaining crust mixture on top.
- Bake for 30-32 minutes or until the edges are golden brown. Let the bars cool at room temperature before slicing.
Notes
Chilling the butter beforehand ensures a flakier crust.
Feel free to adjust the amount of sugar based on the sweetness of the plums you use.
