Description

These Plum Bars offer a delightful blend of buttery crust and sweet plums. Perfect for dessert lovers, they are simple to prepare and ideal for sharing with family.


Ingredients

  • 1 ¾ cup all purpose flour
  • â…” cup sugar
  • ½ tsp baking powder
  • ¼ tsp salt
  • ½ cup butter, cold
  • 1 egg, whisked
  • 2 tbsp milk
  • 4 plums, diced small
  • ¼ cup sugar
  • 2 tbsp all purpose flour
  • ½ tsp vanilla extract

Instructions

  1. Preheat the oven to 400° F and line an 8×8 baking dish with parchment paper.
  2. In a large bowl, mix together the flour, sugar, baking powder, and salt. Use a cheese grater to grate the cold butter into the bowl.
  3. Combine the mixture until the butter resembles small pebbles, then add the whisked egg and milk, stirring to mix well.
  4. In another medium bowl, combine the diced plums with additional sugar, flour, and vanilla extract, and mix well.
  5. Press â…” of the crust mixture into the prepared baking pan using your hands.
  6. Spread the plum mixture evenly over the crust in the pan, then sprinkle the remaining crust mixture on top.
  7. Bake for 30-32 minutes or until the edges are golden brown. Let the bars cool at room temperature before slicing.

Notes

Chilling the butter beforehand ensures a flakier crust.
Feel free to adjust the amount of sugar based on the sweetness of the plums you use.
These bars can be served warm or at room temperature.
