- 4 pork chops
- salt & pepper to taste
- 1/4 teaspoon garlic powder
- flour (for dredging)
- 4 tablespoons butter divided
- 1 tablespoon olive oil
- 1/4 cup chicken broth or dry white wine
- 1 tablespoon lemon juice + zest of 1 lemon
- 1 tablespoon brined capers drained
- 1/2 cup heavy/whipping cream
- chopped parsley and/or freshly grated parmesan cheese (optional)
Instructions
- Season the pork chops on both sides with salt & pepper and garlic powder, then coat them in flour.
- In a skillet, melt half the butter with olive oil over medium-high heat.
- Once the skillet is hot, sear the pork chops for 3-5 minutes on each side until golden brown, then transfer them to a plate.
- Remove the skillet from heat and add chicken broth, lemon juice, lemon zest, the remaining butter, and capers, scraping up brown bits from the skillet.
- Stir in the heavy cream and return to heat until bubbling, then add the pork chops back in.
- Cook for an additional 3-5 minutes until pork is fully cooked and the sauce thickens to your preference.
- Garnish with fresh parsley and/or parmesan cheese before serving.
Notes
Feel free to swap chicken broth with white wine for enhanced flavor.
For a gluten-free version, use your choice of gluten-free flour for dredging.
