Ingredients
Scale
- 1 cup water
- 1/2 cup pumpkin puree
- 2 tablespoons vegetable oil
- 1 teaspoon vanilla extract
- 1 3/4 cups all-purpose flour
- 3 tablespoons brown sugar
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/2 teaspoon salt
- 1/2 cup granulated sugar
- 2 teaspoons cinnamon
- 1 quart vegetable oil for frying
- 8 oz cream cheese softened
- 1/4 cup granulated sugar
- 1/4 cup light brown sugar packed
- 1/4 cup milk
- 1 tablespoon vanilla extract
- 1 teaspoon cinnamon
- 3 tablespoons maple syrup
Instructions
- Start by preparing the cinnamon maple cream cheese dip.
- Combine cream cheese, 1/4 cup granulated sugar, light brown sugar, milk, 1 tablespoon vanilla extract, 1 teaspoon cinnamon, and maple syrup in a bowl and mix until smooth.
- Chill the dip in the fridge until ready to serve.
- In another bowl, mix 1/2 cup granulated sugar and 2 teaspoons cinnamon for the churro coating and set aside.
- Prepare a draining plate lined with paper towels.
- In a large bowl, whisk together water, pumpkin puree, 2 tablespoons vegetable oil, and 1 teaspoon vanilla extract.
- Stir in all-purpose flour, 3 tablespoons brown sugar, 1 teaspoon cinnamon, nutmeg, and 1/2 teaspoon salt until a dough forms.
- Transfer the churro dough into a pastry bag with a large star tip.
- Heat 1 quart of vegetable oil in a deep-fryer, skillet, or Dutch oven to 375°F, using a candy thermometer for accuracy.
- Pipe 4-inch strips of dough into the hot oil, frying only a few at a time to prevent overcrowding.
- Fry the churros for about 2 minutes per side until golden brown, then remove and drain on the paper towel-lined plate for 1 minute.
- While warm, toss the churros in the reserved cinnamon sugar mixture until fully coated.
- Serve the Pumpkin Churros warm, alongside the chilled cream cheese dip.
Notes
For extra sweetness, you can adjust the amount of sugar in the dip.
Ensure the oil is at the right temperature for even cooking.
Churros are best enjoyed fresh but can be stored in an airtight container for a day.
