Description

These Pumpkin Delight Cookies are filled with a luscious pumpkin filling and perfectly shaped for a festive treat. A delightful blend of spices and easy preparation makes them ideal for any occasion. Homemade goodness in every bite!


Ingredients

  • 15 oz canned pure pumpkin
  • 1 1/2 cup sugar
  • 2 tsp pumpkin pie spice
  • 2 tsp cinnamon
  • 1 tsp cornstarch
  • 3/4 cup apple juice
  • 12 tbsp butter melted
  • 1 cup sugar
  • 1/4 cup molasses
  • 1 egg
  • 2 tsp baking soda
  • 1 tsp cinnamon
  • 1 tsp pumpkin pie spice
  • 1/4 tsp salt
  • 3 cups flour

Instructions

  1. Prepare the pumpkin filling by whisking together pumpkin purée, 1½ cups of sugar, pumpkin pie spice, and cinnamon in a medium saucepan.
  2. In a small bowl, combine cornstarch and apple juice until smooth, then add to the saucepan and stir well.
  3. Cook over medium heat until it gently boils, then reduce heat to simmer for about 10 minutes. Remove from heat and allow to cool completely.
  4. In a large bowl, beat melted butter and 1 cup of sugar with a hand mixer until thickened, about 2–3 minutes. Add molasses and egg, mixing until smooth.
  5. Incorporate baking soda, cinnamon, pumpkin pie spice, salt, and flour, mixing until a soft dough forms. Adjust with extra flour if necessary.
  6. Chill the dough for 30 minutes, then preheat oven to 350°F. Roll dough to ¼ inch thickness and cut out cookies with a pumpkin-shaped cutter.
  7. For the faces, cut out triangle eyes and mouths using a knife on half of the cookies.
  8. Assemble cookies by adding a tablespoon of cooled filling onto bottom cookie pieces and placing a face cookie on top, pressing gently to seal.
  9. Arrange on a parchment-lined baking sheet and bake for 10–13 minutes. Cool slightly on the sheet before transferring to a rack.

Notes

Ensure the pumpkin filling cools completely before assembling to thicken.
For a unique touch, try adding nuts or chocolate chips to the cookie dough.
Using a flour-dusted surface while rolling out dough helps prevent sticking.
