Description

These Pumpkin Truffles feature a creamy blend of pumpkin puree and cream cheese, encased in a smooth white chocolate coating. Perfect for gatherings or sweet cravings, they are simple to prepare and bursting with flavor.


Ingredients

  • 2 tablespoons powdered sugar
  • 1/3 cup pumpkin puree
  • 1 ¾ cups finely ground graham cracker crumbs
  • 1 teaspoon pumpkin pie spice
  • ½ teaspoon cinnamon
  • 12 ounces white chocolate chips
  • optional: extra graham cracker crumbs or english toffee bits

Instructions

  1. In a mixing bowl, beat the softened cream cheese and powdered sugar until creamy and smooth.
  2. Mix in the pumpkin puree and cinnamon until fully combined.
  3. Add the graham cracker crumbs and pumpkin pie spice, mixing until the dough is thick and smooth, about 1-2 minutes.
  4. Cover the dough and refrigerate for about 2 hours.
  5. Line a baking sheet with parchment paper.
  6. Scoop a tablespoon of dough, roll into a ball, and place it on the baking sheet, ensuring they are spaced 2 inches apart. This should yield about 20 truffles.
  7. Chill the truffles for 20-25 minutes before dipping them in chocolate.
  8. Melt the white chocolate chips in a microwave-safe bowl, heating in 10-15 second intervals, stirring until smooth.
  9. Dip each truffle in the melted chocolate using a fork, ensuring they are fully coated. Allow excess chocolate to drip off.
  10. Return the truffle to the baking sheet and sprinkle with graham cracker crumbs or toffee bits if desired.
  11. Let the truffles set in the refrigerator before serving, though they can be left at room temperature for a few hours.
