- 1 teaspoon espresso powder, optional
- 1 teaspoon kosher salt
- 1 1/4 cups chopped chocolate, divided
- 3/4 cup creamy peanut butter
- 1/2 cup unsalted butter, softened
- 1 1/4 cups powdered sugar
- 1/2 teaspoon kosher salt
- 1/2 teaspoon pure vanilla extract
- 1 tablespoon heavy cream
- 3 cups puppy chow
Instructions
- Preheat the oven to 350°F. Line a 9×13-inch baking pan with parchment paper and lightly grease.
- In a large bowl, whisk together the melted butter, granulated sugar, and brown sugar until smooth. Add the eggs and vanilla extract and whisk until well combined. Stir in the flour, cocoa powder, espresso powder (if using), and salt until just mixed. Fold in 1 cup of the chopped chocolate.
- Spread the batter in the prepared pan and top with the remaining ¼ cup chopped chocolate. Bake for 25 to 35 minutes until a toothpick inserted comes out with a few moist crumbs. Allow cooling completely in the pan.
- In a stand mixer, beat the peanut butter and softened butter until smooth. Add powdered sugar, salt, vanilla extract, and heavy cream, then mix until fluffy.
- Spread the peanut butter frosting evenly over the brownies once cooled.
- Sprinkle puppy chow over the frosting, gently pressing it down to adhere.
- Cut into squares and serve.
