Ingredients

Scale
  • 2 packages refrigerated crescent rolls
  • 1/2 cup heavy cream
  • 2 teaspoons pure vanilla extract, divided
  • 1 cup + 1 teaspoon powdered sugar, divided
  • 16 ounces cream cheese, softened
  • 1 tablespoon fresh lemon juice
  • zest of 1 lemon
  • 1 cup raspberries
  • 1 cup blueberries
  • fresh mint or fresh basil leaves

Instructions

  1. Preheat the oven to 350 degrees F.
  2. Unroll the crescent dough onto a 15x10x1-inch sheet pan, pressing the perforations to seal.
  3. Bake for 12 to 15 minutes or until golden brown.
  4. Allow to cool completely on a wire rack.
  5. In a chilled bowl, combine the heavy cream and 1 teaspoon of vanilla, then whisk until soft peaks form.
  6. Sprinkle 1 teaspoon of powdered sugar into the whipped cream and whisk until stiff peaks are formed. Set aside.
  7. In another bowl, beat the softened cream cheese, 1 cup of powdered sugar, lemon juice, lemon zest, and the remaining 1 teaspoon of vanilla until smooth.
  8. Gently fold the whipped cream into the cream cheese mixture.
  9. Spread the mixture evenly over the cooled crust.
  10. Top with raspberries and blueberries.
  11. Serve immediately or refrigerate until ready to serve, garnishing with fresh mint or basil.

Notes

Use a mixture of berries to enhance flavor and presentation.
For best results, make sure the cream cheese is soft to blend easily with other ingredients.
Chill before serving for a refreshing treat.
