Description

These Red, White, and Blue Tortilla Cups bring together the crispness of tortillas with luscious whipped cream and fresh berries. A delightful, easy treat perfect for summer gatherings or a quick dessert.


Ingredients

  • 3 small flour tortillas
  • 2 tbsp. coconut oil, melted
  • 1 tbsp. honey
  • 1 tsp. ground cinnamon
  • 1 cup whipping cream
  • 1/2 tsp. natural sweetener like Truvia
  • 1 tsp. vanilla
  • 1 cup fresh berries (blueberries, raspberries, strawberries)
  • Optional: cocoa powder

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tortillas into quarters using a pizza slicer.
  3. Mix melted coconut oil and honey in a small bowl until well combined.
  4. Brush each tortilla quarter with the coconut oil mixture and sprinkle with ground cinnamon.
  5. Press three triangles into a muffin pan to form cups.
  6. Bake the tortilla cups for 15 minutes until golden. Then, remove from the pan and let cool.
  7. In a separate bowl, combine whipping cream, sweetener, and vanilla. Beat until soft peaks form.
  8. Once cooled, fill each tortilla cup with whipped cream.
  9. Top the whipped cream with a mix of fresh berries.
  10. Optionally, dust with cocoa powder if desired.

Notes

Make sure to allow the tortilla cups to cool completely before adding the whipped cream to keep it from melting.
You can use any combination of berries you like for a pop of color and flavor.
These cups can be made ahead and assembled just before serving.
