- 2 lbs boneless, skinless chicken breast
- 10 ounces rotel tomatoes with green chiles, drained
- ½ teaspoon salt
- ½ teaspoon garlic powder
- ½ teaspoon cumin
- ½ teaspoon chili powder
- ¾ cup shredded cheddar cheese
- freshly chopped cilantro
- freshly chopped green onions
Instructions
- Preheat the oven to 400ËšF.
- Combine salt, garlic powder, cumin, and chili powder. Season both sides of the chicken breast and arrange in a large casserole dish.
- Drain the Rotel and evenly distribute it over the chicken breasts. Sprinkle the cheddar cheese on top.
- Cover with foil and bake for 25 minutes. Remove the foil and continue baking for an additional 5-10 minutes until the chicken is cooked through with an internal temperature of 165ËšF.
- Garnish with freshly chopped cilantro or green onions and serve warm!
Notes
For added spice, consider using hot Rotel tomatoes.
