Ingredients
Scale
- 2 tablespoons ghee or oil, divided
- 4 oz baby red potatoes, quartered
- sea salt, black pepper, smoked paprika, garlic powder, chili powder (to taste)
- 1 handful chopped kale
- 1 tablespoon water
- 3–4 oz ground pork sausage or any ground meat
- 1 large egg
- 1/4–1/2 avocado, sliced
- lime juice (to taste)
- sea salt (to taste)
- scallions, thinly sliced
- fresh salsa
Instructions
- In a microwave-safe bowl, heat the potatoes on high for 3 minutes to soften them.
- Heat a medium skillet over medium-high heat and add oil. Add the potatoes and season gently with all seasonings.
- Fry the potatoes until browned and crispy, about 3 minutes, then use a slotted spoon to transfer them to a bowl, covering with aluminum foil to keep warm.
- Add a bit more ghee to the skillet, then add chopped kale and water. Cover to wilt, then uncover and stir, cooking until desired consistency. Season with sea salt and pepper and add to the bowl with the potatoes.
- In the same skillet, add sausage or ground meat and cook until browned, about 2 minutes. Transfer to the bowl and keep warm.
- Adjust heat to medium, add remaining ghee to the skillet, and fry the egg to your liking, spooning ghee over the top or flipping as desired.
- Place the fried egg on the bowl with the other ingredients. Top with avocado, lime juice, sea salt, scallions, and fresh salsa. Serve immediately.
Notes
Ghee can be swapped for olive oil or butter if preferred.
