Made with cashews, silken tofu, and fresh broccoli, it’s not just delicious but packed with protein, making it an excellent choice for a hearty meal. Enjoy a comforting bowl of this easy homemade classic!

Ingredients

Scale
  • 1 cup raw cashews
  • 12 ounces small pasta of choice
  • 2 heads broccoli (about 6 cups florets)
  • 1/2 cup water
  • 1 block (10.8oz) Mori Nu silken tofu
  • 4 tablespoons nutritional yeast
  • 3 tablespoons lemon juice
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1 teaspoon salt

Instructions

  1. Soak the cashews by boiling 3 cups of water, pouring it over the cashews, and letting them sit for at least 5 minutes.
  2. Cook the pasta in boiling water for 5-6 minutes, then add broccoli and cook for another 1-2 minutes before draining.
  3. Drain the cashews and add them to a high-powered blender along with 1/2 cup water, silken tofu, nutritional yeast, lemon juice, onion powder, garlic powder, and salt. Blend until smooth.
  4. Return the drained noodles and broccoli to the same pot, mix in the cheese sauce, and stir until well coated. If cold, warm over low-medium heat and serve immediately.

Notes

For extra flavor, consider adding some spices or herbs to the cheese sauce.
Ensure the cashews are well soaked for better blending and creaminess.
This dish can be refrigerated and reheated for a quick meal later.
