- 1/4 cup avocado oil
- 3 tablespoons lime juice
- 1 tablespoon garlic, minced
- 2 tablespoons light brown sugar
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/4 teaspoon cayenne powder
- 1 each chili in adobo sauce, seeds removed and minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 whole lime
Instructions
- Trim any excess fat from the chicken breasts and place them in a freezer bag or between sheets of plastic wrap.
- Use a meat tenderizer or rolling pin to pound the thickest parts of the chicken to an even thickness.
- Combine the avocado oil, lime juice, minced garlic, brown sugar, chili powder, cumin, cayenne, and minced chili in a small bowl. Mix until well combined.
- Pour the marinade over the chicken, ensuring it coats all sides.
- Refrigerate the chicken to marinate for at least 2 hours or up to 24 hours.
Notes
For an extra kick, add more cayenne pepper according to your taste.
If you’re short on time, marinate for at least 30 minutes for flavor.
