- 1 cup (227 g) salted butter
- 1½ cups (300 g) granulated sugar
- 1 large egg
- 1 egg yolk
- 2 teaspoons vanilla
- ½ teaspoon almond extract
- 2¾ cups (380 g) all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- 4 ounces (113.4 g) cream cheese, room temperature
- 2 tablespoons salted butter
- 1 teaspoon vanilla

- 1¾ cup (210 g) powdered sugar
- fresh fruit for topping
Instructions
- Preheat the oven to 375°F (190°C). Line two baking sheets with parchment paper.
- In a stand mixer fitted with a paddle attachment, cream together salted butter and granulated sugar on medium-high speed until light and fluffy, about 3 minutes.
- Add the large egg, egg yolk, vanilla, and almond extract to the mixture, and mix on low speed until smooth, about 30 seconds.
- Gradually mix in baking soda, salt, and all-purpose flour until combined.
- Scoop the dough into large balls, using a ¼ cup cookie scoop.
- Place 6-7 dough balls on the prepared baking sheets and bake for 11-14 minutes until lightly golden brown at the edges with some crackling on top. Avoid overbaking.
- In a bowl, beat together cream cheese and 2 tablespoons salted butter until smooth. Mix in vanilla, a pinch of salt, and powdered sugar until well combined.
- Spread the frosting generously on each cooled cookie and top with diced fresh fruit.
Notes
For best results, use room temperature ingredients for the frosting.
