Ingredients
Scale
- 1¼ cups all-purpose flour
- 1/2 teaspoon salt
- 4 ounces Crisco
- 1/8 cup cold water
- 15 ounces pumpkin puree
- 12 ounces evaporated milk
- 3/4 cup light brown sugar
- 1½ teaspoons cinnamon
- 1/2 teaspoon salt
- 1/2 teaspoon ground ginger
- 1/2 teaspoon ground cloves
- 2 large eggs
Instructions
- Combine the flour, salt, and Crisco in a large mixing bowl, mixing with your fingers until it resembles coarse meal.
- Make a well in the center and add cold water. Mix gently, bringing the flour into the center until moistened. Do not overmix.
- Form the dough into a flat disc, wrap it in plastic, and let it rest in the cooler for 30 minutes to 1 hour.
- Roll out the rested dough on a floured surface to 1/4" thickness and large enough for the pie plate.
- Transfer the rolled dough to a 9" pie plate, cut off excess, tuck under the edges, and crimp for a decorative edge.
Notes
Ensure the water is cold for the best dough texture.
Resting the dough is crucial for a flaky crust.
Feel free to adjust the spice levels to your preference.
