Description

This Tiramisu Cake is a delightful blend of light textures and rich flavors. Made with creamy mascarpone cheese and coffee, it’s the perfect dessert for gatherings or moments of indulgence. Easy to prepare with simple ingredients, you can enjoy this fluffy cake chilled for the ideal finish!


Ingredients

  • 6 large eggs (room temperature)
  • 1 cup granulated sugar
  • 1 cup all purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 4 ounces cream cheese (room temperature)
  • 4 ounces mascarpone cheese (cold)
  • 1 cup butter (room temperature)
  • 5 cups powdered sugar
  • 1 teaspoon pure vanilla extract
  • 1/4 cup strongly brewed coffee or espresso
  • 1/4 cup unsweetened cocoa powder (for garnish)

Instructions

  1. Preheat the oven to 350°F and grease the bottom of three 6-inch round cake pans with nonstick baking spray. Line the bottoms with parchment paper.
  2. In a stand mixer, add eggs and beat on medium-high while slowly adding granulated sugar. Continue beating until the mixture reaches the ribbon stage (5-8 minutes).
  3. Sift flour, baking powder, and cinnamon into the egg mixture and fold carefully to incorporate.
  4. Divide batter among the prepared pans and bake for 15-18 minutes until a toothpick comes out clean.
  5. Let cakes cool in the pans for 10 minutes, then turn out onto a wire rack to cool completely.
  6. Optional: Freeze the cakes for at least 4 hours for easier frosting, then brush tops with espresso before assembly.
  7. For the frosting, combine cream cheese, mascarpone, and butter in a stand mixer and beat until smooth.
  8. Gradually add powdered sugar, scraping sides as needed. Then add vanilla and beat until light and fluffy (2-3 minutes).
  9. Assemble the cake by brushing each layer with espresso and spreading frosting between the layers, stacking them carefully.
  10. Cover the top and sides with frosting and pipe additional decorations if desired.
  11. Sift cocoa powder over the top and refrigerate loosely covered for 4 hours before serving.

Notes

For a firmer cake that’s easier to frost, freeze the layers before assembly.
Allow the cake to chill in the refrigerator for optimal flavor and texture.
Customize the cocoa garnish based on preference—more or less, depending on your taste.
